The primary function of this industrial chemical is to act as an oxidizing agent. It creates tiny bubbles as it breaks down during processing, causing things to become foamy. Other ingredients to avoid when shopping for bread at your local grocery store would be: Potassium bromate, partially hydrogenated oil, sugar, butylated hydroxyanisole (BHA), caramel coloring, high-fructose corn syrup, soybean oil or soy lecithin.
